Ingredients
Peach Filling
- 2 cups fresh peaches, peeled and diced Use ripe peaches for the best flavor.
- 1/2 cup sugar
- 1 tablespoon cornstarch

Pie Crust
- 1 package refrigerated pie crusts (2 crusts) Store-bought pie crusts save time.
Egg Wash and Glaze

- 2 tablespoons milk For glaze; you can use fruit juice instead.
- 1 teaspoon vanilla extract For glaze.
Instructions
Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, mix the diced peaches, sugar, cornstarch, and cinnamon until well combined. Set aside.
- Roll out the pie crusts on a flat surface. Use a round cutter or a glass to cut circles about 4-5 inches in diameter.
- Place a spoonful of the peach mixture in the center of each pie crust circle.
- Fold the crust over the filling to create a half-moon shape. Pinch the edges with a fork to seal them.
- Place the hand pies on a baking sheet lined with parchment paper. Brush the top of each pie with the beaten egg.
Baking
- Bake in the preheated oven for 15-20 minutes or until they are golden brown.
Glazing
- While the pies are baking, mix the powdered sugar, milk, and vanilla extract in a small bowl for the glaze.
- Once the pies are out of the oven, let them cool for a few minutes before drizzling the glaze over the top.
