Ingredients
  

For the Peach Filling

  • 4 cups fresh peaches, sliced Choose ripe peaches for the best flavor.
  • 1 cup sugar Adjust based on sweetness of the peaches.
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch

For the Batter

  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the sliced peaches with sugar, lemon juice, and cornstarch. Pour this mixture into a greased baking dish.
  • In another bowl, combine the flour, milk, melted butter, baking powder, salt, and vanilla. Mix until you have a smooth batter.
  • Pour the batter over the peaches in the baking dish.

Baking

  • Bake for 30-40 minutes, or until the top is golden brown and the cobbler is set.

Notes

Serve warm out of the oven, optionally with a scoop of vanilla ice cream or whipped cream. To store leftover cobbler, let it cool completely, cover it with plastic wrap or transfer it to an airtight container, and refrigerate for up to 3-4 days. It can also be frozen for longer storage.
