Preparation

  • In a large pot, brown the ground beef over medium heat.
  • Add the chopped onion and minced garlic, cooking until softened.
  • Stir in the diced potatoes and beef broth, bringing to a boil.
  • Reduce heat, cover, and simmer until the potatoes are tender, about 15-20 minutes.
  • Stir in the heavy cream and cheddar cheese, cooking until the cheese is melted and the soup is creamy.
  • Season with salt and pepper.
  • Serve hot, garnished with parsley and additional cheese if desired.

Notes

To store leftovers, let the soup cool completely and transfer to an airtight container. Refrigerate for 3-4 days or freeze for up to 3 months. Reheat by thawing overnight and warming on the stove over low heat.
