Ingredients
  

Main Ingredients

  • 2 medium zucchini, grated (about 400g) Draw moisture with salt
  • 1 tsp salt For drawing out moisture
  • 2 large eggs Bind the ingredients
  • 1/3 cup chickpea flour Can substitute for almond or wheat flour
  • 2 tbsp grated Parmesan Adds flavor
  • 2 cloves garlic, minced Enhances flavor
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tbsp fresh parsley, chopped For garnish and flavor
  • 1 spray Olive oil spray To prevent sticking

Instructions
 

Preparation

  • Salt and drain the grated zucchini in a colander for 10 minutes.
  • Afterward, squeeze out all excess moisture using a clean kitchen towel.
  • Preheat the air fryer to 200°C (390°F) for 3 minutes.

Mixing

  • In a large bowl, mix the drained zucchini with eggs, chickpea flour, Parmesan, garlic, pepper, onion powder, and parsley until a thick batter forms.

Cooking

  • Spray the air fryer basket lightly with olive oil.
  • Scoop heaped tablespoons of batter into the basket, flattening each into a patty.
  • Spray the tops of the fritters with olive oil.
  • Air fry for 10 to 12 minutes.
  • Carefully flip the fritters and cook for another 8 minutes until golden and firm.
  • Let them rest for 2 minutes before serving to allow them to crisp up fully.

Notes

Zucchini fritters can be served warm or at room temperature. They pair well with yogurt dip, sour cream, or spicy salsa. Garnish with fresh parsley for a nice touch.
