  • 4 cups sweet potatoes (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • If using fresh sweet potatoes, peel and boil until tender, then mash. If using canned sweet potatoes, drain well.
  • In a mixing bowl, combine sweet potatoes, brown sugar, milk, butter, vanilla, cinnamon, and salt. Mix until smooth.
  • Transfer the mixture to a greased baking dish.

Baking

  • Top the mixture with mini marshmallows.
  • Bake in the preheated oven for about 30 minutes, or until heated through and marshmallows are golden brown.
  • Serve warm.

Notes

For a creamier texture, add more milk or use heavy cream instead. Adding chopped pecans or walnuts on top along with the marshmallows adds a nutty flavor. Make sure the sweet potatoes are well-mashed to avoid lumps.
