  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1 piece bell pepper, sliced any color
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a crock pot, combine the pineapple juice, soy sauce, garlic, brown sugar, and ginger.
  • Add the chicken thighs and coat them well with the sauce.
  • Layer the sliced bell peppers and onions on top of the chicken.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
