Ingredients
  

For the Rice

  • 2 cups sushi rice Use sushi rice for the best texture.
  • 2.5 cups water
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon salt

For the Toppings

  • 1 pound imitation crab meat
  • 0.5 cup spicy mayonnaise Adjust according to spice preference.
  • 0.25 cup unagi sauce
  • Nori sheets Nori sheets, for serving For wrapping the sushi bake.
  • Chopped green onions For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Rinse the sushi rice under cold water until the water runs clear.
  • Combine the rice and water in a rice cooker or pot, and cook according to package instructions.
  • Once the rice is cooked, mix in rice vinegar and salt.

Assembly

  • In a baking dish, spread half of the sushi rice evenly as the first layer.
  • Layer the imitation crab meat on top of the rice, followed by the spicy mayo and a drizzle of unagi sauce.
  • Add the remaining sushi rice on top, spreading it evenly.

Baking

  • Bake in the oven for about 15-20 minutes, or until heated through.

Serving

  • Serve warm with nori sheets and garnish with chopped green onions.

Notes

If you have leftovers, let the Sushi Bake cool completely. Store it in an airtight container in the fridge for up to 2 days. To reheat, place it in the oven at a low temperature until warmed through. You can also customize the dish by using different seafood or adding vegetables.
