Ingredients
  

For the sushi base

  • 2 cups sushi rice Make sure to use sushi rice for the optimal texture.
  • 1/2 cup rice vinegar Season the rice well with this for best flavor.

For the filling

  • 1/2 lb imitation crab or cooked shrimp, shredded You can substitute with your favorite protein.
  • 1 avocado, diced Adds creaminess to the dish.
  • 1 cucumber, diced Adds freshness and crunch.
  • 1/4 cup mayonnaise Use Japanese mayonnaise for enhanced flavor.
  • 2 tablespoons sriracha Adjust based on desired spiciness.
  • 1/4 cup green onions, sliced For garnish and flavor.
  • 1 sheet nori, cut into strips For serving.

For serving

  • Soy sauce For dipping.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the sushi rice according to package instructions, then mix with rice vinegar and let cool.
  • In a bowl, combine the imitation crab or shrimp, diced avocado, cucumber, mayonnaise, and sriracha.

Baking

  • In a baking dish, spread the sushi rice evenly across the bottom.
  • Layer the crab mixture on top of the rice.
  • Bake for about 15-20 minutes until warmed through.
  • Garnish with green onions and serve with nori strips and soy sauce on the side.

Notes

You can store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven for the best texture or use the microwave for a quick warm-up.
