Main Ingredients

  • 2 cups fresh spinach Packed with vitamins and minerals.
  • 1 cup feta cheese, crumbled Adds tangy flavor.
  • 4 large flour tortillas Use gluten-free tortillas to make it gluten-free.
  • 1 tablespoon olive oil For sautéing the spinach.
  • to taste Salt and pepper For seasoning.

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add fresh spinach and sauté until wilted, about 2-3 minutes.
  • Remove from heat and mix in crumbled feta cheese.

Cooking

  • Place a tortilla in the skillet, add a portion of the spinach and feta mixture, and top with another tortilla.
  • Cook until the bottom tortilla is golden brown, then flip to cook the other side, about 2-3 minutes.
  • Remove from skillet, slice into wedges, and serve hot.

Notes

For best results, serve hot. Can be paired with salsa, sour cream, or a simple salad. Leftover quesadillas can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave. Squeeze excess moisture from the spinach before mixing.
