Main Ingredients

  • 4 large Potatoes Peeled and cubed
  • 2 medium Onion Chopped
  • 2 medium Carrots Chopped
  • 1 lb Sausage Use smoked sausage for more flavor
  • 4 cups Vegetable broth
  • 1 cup Milk
  • 1 cup Cheddar cheese Shredded for easy melting
  • 1 tbsp Cornstarch To thicken the soup

Seasonings

  • 2 cloves Garlic Minced
  • 1 tsp Garlic powder
  • 1 tsp Onion powder

Preparation

  • In a 6-quart slow cooker, combine all ingredients except the milk, cornstarch, and cheese. Stir well.
  • Cover the pot and cook on a low-heat setting for 6 hours.
  • About 30 minutes before the soup is done, mix the cornstarch with the milk and add it to the slow cooker.
  • Once the cooking time is up, turn off the cooker and open the lid. Stir in the cheddar cheese and allow it to melt.
  • Serve hot.

Notes

Garnish with additional cheese or fresh herbs. Pair with crusty bread or a simple salad. To store, let it cool completely and transfer to an airtight container; it can be refrigerated for 3-4 days or frozen for 2-3 months. Reheat gently, adding milk if too thick.
