  • 1 lb smoked sausage, sliced Use your preferred type of smoked sausage.
  • 4 cups potatoes, diced Yukon gold or russet potatoes work well.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 1 cup heavy cream Adjust for thickness as desired.
  • Salt and pepper to taste
  • 1 tablespoon olive oil For sautéing.
  • Fresh parsley for garnish

Preparation

  • In a large pot, heat olive oil over medium heat. Add the onion and garlic; sauté until onions are translucent.
  • Add the sliced sausage and cook for 5 minutes until browned.
  • Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  • Stir in the heavy cream and season with salt and pepper.
  • Simmer for an additional 5 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

To store leftovers, cool to room temperature and transfer to an airtight container. Refrigerate for up to 3-4 days or freeze for up to 3 months. Thaw in the fridge before reheating. Feel free to add other vegetables or adjust the spice level according to your preference.
