Preparation

  • In a large mixing bowl, beat the egg whites until frothy.
  • Gradually add the powdered sugar, mixing until smooth.
  • Add lemon juice and beat until glossy.
  • If using food coloring, divide the icing and mix in the desired colors.

Decorating

  • Adjust the consistency of the icing by adding water for flooding or more powdered sugar for piping.
  • Decorate sugar cookies as desired and allow to dry completely.

Notes

Make sure your mixing bowl and utensils are clean and dry. Any grease can affect the icing's ability to whip up properly. For flavored royal icing, add a few drops of vanilla or other extracts.
