Ingredients
  

Pasta and Vegetables

  • 8 oz pasta (any type) You can use spaghetti, penne, or whole wheat.
  • 1 cup mixed vegetables (like bell peppers, broccoli, and carrots) Fresh or frozen works well.

Cooking Essentials

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning You can substitute with dried basil, oregano, and thyme.
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional) Serve on top.

Preparation

  • Cook the pasta according to the package instructions. Drain and set aside.

Cooking

  • In a large pan, heat the olive oil over medium heat.
  • Add the minced garlic and cook until fragrant, about 1 minute.
  • Add the mixed vegetables to the pan. Sauté for about 5-7 minutes until they are tender.
  • Stir in the cooked pasta, Italian seasoning, salt, and pepper. Mix well to combine.
  • Cook for another 2 minutes, then remove from heat.

Serving

  • Serve hot and sprinkle with grated Parmesan cheese if desired.

Notes

You can also add a side salad or garlic bread for a complete meal. To store leftovers, place in an airtight container and refrigerate for up to 3 days or freeze after cooling completely.
