Ingredients
  

Burrito Filling

  • 4 cups Pulled rotisserie chicken You can use any leftover rotisserie chicken.
  • 2 cups Fajita veggies (bell peppers and onions) Fresh vegetables are recommended.
  • 1 can Black beans Rinsed and drained.
  • 1 cup Corn Canned or frozen corn works well.
  • 1 cup Green chile cheese sauce Can be adjusted based on preference.
  • 4 large Tortillas Use any type of tortilla as per your preference.
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • In a skillet over medium heat, sauté fajita veggies until softened.
  • Add pulled rotisserie chicken, black beans, and corn to the skillet. Season with salt and pepper and mix well.
  • Warm tortillas in a separate pan or microwave.

Assembly

  • Place a generous amount of the chicken mixture on each tortilla and top with green chile cheese sauce.
  • Roll the tortillas tightly and serve immediately or wrap for meal prep.

Notes

For extra flavor, marinate the chicken before pulling it. Feel free to add more veggies like zucchini or mushrooms. To spice it up, add jalapeños or hot sauce. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days, or freeze the filling before wrapping in tortillas.
