  • 4 medium Potatoes Fresh for the best flavor
  • 1 medium Onion Peeled and diced
  • 4 cups Vegetable broth Can substitute chicken broth
  • 2 tablespoons Butter Can use vegan butter or olive oil

Preparation

  • Peel and dice the potatoes and onion.

Cooking

  • In a large pot, melt the butter over medium heat and sauté the onion until translucent.
  • Add the diced potatoes and vegetable broth to the pot.
  • Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  • Use a potato masher or blender to mash until desired consistency is reached.
  • Season with salt to taste and serve warm.

Notes

Consider adding freshly chopped herbs, croutons, shredded cheese, or a dollop of sour cream for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat gently before serving.
