Ingredients
  

For the crust

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 170 g unsalted butter at room temperature
  • 1 large egg
  • 1 tsp vanilla extract

For the peach filling

  • 3 cups diced peaches fresh or canned (drained)
  • 2 tbsp cornstarch
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 1/2 tsp cinnamon

Preparation

  • Preheat the oven to 180°C (350°F) and line a baking pan with parchment paper.
  • In a bowl, mix the flour, granulated sugar, brown sugar, baking powder, and salt.
  • Add the unsalted butter, egg, and vanilla extract to the dry ingredients. Mix until it forms a crumbly dough.
  • Press two-thirds of the dough into the bottom of the prepared baking pan to form the crust.
  • In another bowl, mix the diced peaches with sugar, cornstarch, lemon juice, and cinnamon.
  • Spread the peach filling evenly over the crust in the pan.
  • Crumble the remaining dough on top of the peach filling.

Baking

  • Bake in the preheated oven for 35–40 minutes, or until the top is golden brown.
  • Allow the bars to cool completely before slicing into squares.

Notes

Peach Crumb Bars are best served at room temperature or slightly chilled. Enjoy plain or with a scoop of vanilla ice cream. A light dusting of powdered sugar can enhance presentation. Store in an airtight container; they last at room temperature for a couple of days or refrigerate for up to a week. For longer storage, freeze wrapped tightly for up to three months.
