Ingredients
  

Crust and Topping

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Peach Filling

  • 2 cups fresh peaches, peeled and diced Make sure they are ripe for best flavor.
  • 1 teaspoon lemon juice
  • 1 cup heavy cream Can substitute with half-and-half or milk.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large bowl, mix together the flour, granulated sugar, brown sugar, and salt. Cut in the butter until the mixture is crumbly.
  • Press half of the mixture into the bottom of the prepared dish to form the crust.
  • In another bowl, combine the diced peaches, lemon juice, and heavy cream.
  • Spread the peach mixture over the crust, then crumble the remaining flour mixture on top.

Baking

  • Bake for 30-35 minutes or until the top is golden brown.
  • Allow to cool before slicing into bars.

Serving

  • Serve with a scoop of vanilla ice cream if desired.

Notes

To store Peach Crumb Bars, keep them in an airtight container at room temperature for 2-3 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months. Ripe peaches work best. Optional: drizzle with caramel sauce.
