Ingredients
  

Cheesecake Base

  • 8 oz cream cheese, softened Make sure the cream cheese is softened for easy mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Peach Topping

  • 2 cups sliced peaches (fresh or canned) Fresh peaches give a nice texture.
  • 1/2 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  • In a large bowl, beat the cream cheese and granulated sugar until smooth.
  • Add in the eggs, one at a time, mixing well after each addition.
  • Stir in the vanilla extract and sour cream until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually mix the dry ingredients into the wet mixture until smooth.
  • In a separate bowl, combine the sliced peaches with cinnamon and brown sugar.

Assembly

  • Pour half of the cheesecake batter into the prepared pan.
  • Layer the peach mixture on top.
  • Pour the remaining cheesecake batter over the peaches.
  • Drizzle the melted butter on top.

Baking

  • Bake for about 35-40 minutes, or until the center is set and the edges are lightly browned.
  • Let cool before slicing into bars.

Notes

Serve at room temperature or chilled. Consider adding a dollop of whipped cream or a scoop of vanilla ice cream on top.
