Ingredients
  

Filling

  • 4 cups fresh peaches, sliced Use ripe peaches for best flavor.
  • 1/2 cup sugar Originally for the filling.
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar Sprinkled on top before baking.

Batter

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup butter, melted
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, combine sliced peaches, 1/2 cup of the sugar, cinnamon, and lemon juice. Stir well and set aside.
  • In another bowl, mix together flour, baking powder, remaining sugar, and salt.
  • Add milk, melted butter, and vanilla extract. Mix until just combined.
  • Pour the batter into a greased baking dish.
  • Spoon the peach mixture over the batter, and sprinkle brown sugar on top.

Baking

  • Bake for 35 to 40 minutes or until the topping is golden brown and cooked through.

Notes

Serve warm, preferably with ice cream. For additional flavor, you can sprinkle extra cinnamon or serve with whipped cream.
