  • 4 pieces chicken breasts
  • 1 cup grated Parmesan cheese
  • 2 cups baby potatoes, halved Cut evenly for consistent cooking.
  • 2 cups green beans, trimmed Can substitute with broccoli or asparagus.
  • 3 tablespoons olive oil Divided for coating.
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • On a large sheet pan, toss the halved potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning. Spread them out in a single layer.
  • In a bowl, mix the Parmesan cheese, minced garlic, salt, and pepper.
  • Coat the chicken breasts with the remaining olive oil and then dip them into the Parmesan mixture.
  • Place the coated chicken on the sheet pan with the potatoes.
  • Add the green beans to the sheet pan and drizzle with a bit of olive oil, salt, and pepper.

Cooking

  • Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Serve and enjoy your one-pan dinner!

Notes

Great served alone or with a side salad or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
