  • 8 oz pasta (e.g., penne or rotini)
  • 2 cups smoked sausage, sliced
  • 1 cup BBQ sauce
  • 1 cup honey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup bell pepper, chopped
  • to taste Salt and pepper

Preparation

  • In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
  • Add the sliced sausage and cook until browned.
  • Stir in the BBQ sauce, honey, chicken broth, and chopped bell pepper.
  • Bring the mixture to a boil, then add the pasta.
  • Reduce heat and let it simmer, stirring occasionally, until the pasta is cooked and the sauce thickens (about 10-12 minutes).
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh parsley if desired.

Notes

Allow the pasta to cool completely before storing. Transfer any leftovers to an airtight container and keep them in the refrigerator. It will stay fresh for up to 3 days. You can reheat it on the stove or in the microwave for a quick meal. For extra veggies, consider adding spinach or zucchini. If you like it spicy, add some crushed red pepper flakes to the sauce.
