  • 12 oz fettuccine or penne pasta Whole wheat or gluten-free options can be used.
  • 2 cups chicken broth Use vegetable broth for a vegetarian version.
  • 1 cup heavy cream Can be substituted with half-and-half or milk and sour cream.
  • 1/2 cup buffalo sauce Adjust according to spice preference.
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp cream cheese
  • Salt and pepper To taste.

  • In a large deep pot, heat olive oil or butter over medium heat.
  • Add the cooked chicken, season with garlic powder, salt, and pepper, and sauté for 2–3 minutes until fragrant.
  • Pour in the chicken broth, heavy cream, and buffalo sauce; stir to combine.
  • Add the uncooked pasta directly into the mixture.
  • Bring to a gentle boil, then reduce heat to low and simmer uncovered for 10–12 minutes until pasta is tender.
  • Stir in Parmesan cheese, mozzarella cheese, and cream cheese until melted and smooth.
  • Adjust seasoning as needed; garnish with chopped green onions or parsley before serving.

Notes

This dish pairs well with a fresh salad or garlic bread. For extra spice, consider adding more buffalo sauce.
