Cookie Base

  • 2 cups whole-grain oats
  • 1 cup peanut butter Can substitute with almond butter or sunflower seed butter
  • 1/2 cup maple syrup or agave nectar Use more if the mixture is too dry
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • optional chocolate chips or dried fruit For added sweetness

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, peanut butter, maple syrup, chia seeds, flaxseeds, vanilla extract, baking powder, and salt until well combined.
  • If desired, fold in chocolate chips or dried fruit for added sweetness.
  • Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each cookie slightly with the back of a spoon.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve with a glass of milk or your favorite plant-based milk. Enjoy warm or at room temperature. Store in an airtight container at room temperature for up to one week or freeze for up to three months.
