  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 medium onion, chopped Yellow or white onion works well.
  • 2 cloves garlic, minced Freshly minced for best flavor.
  • 1 can diced tomatoes With juices included.
  • 4 cups beef broth Homemade or store-bought.
  • 1 cup cooked rice Leftover rice works great.
  • 1 can black beans, drained Rinse before adding to remove excess sodium.
  • 1 cup corn kernels Canned or frozen corn both work.

Spices

  • 1 tablespoon chili powder Adjust to taste for heat level.
  • 1 teaspoon cumin Adds depth of flavor.
  • to taste Salt and pepper Season according to preference.

Garnish

  • to taste Fresh cilantro For garnishing.

Instructions
 

Preparation

  • In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • Add chopped onion and garlic, and sauté until the onion is translucent.

Cooking

  • Stir in diced tomatoes, beef broth, black beans, corn, chili powder, cumin, salt, and pepper.
  • Bring the soup to a simmer and let it cook for about 20 minutes.
  • Stir in the cooked rice just before serving.

Notes

Serve hot with toppings like extra cilantro, lime wedges, or tortilla chips. To store, cool completely and transfer to airtight containers for 3-4 days in the fridge or up to 3 months in the freezer. Reheat before serving.
