Instructions

Preparation

  • Pat the chicken breast pieces dry with paper towels and season generously with salt, black pepper, and half of the dried oregano.

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken pieces and sear for 5-6 minutes until golden-brown. Transfer to a plate.
  • Add the remaining olive oil, sauté the garlic for 30 seconds, then add the bell pepper and squash. Cook for 4-5 minutes until softened.
  • Add the cherry tomatoes and cook for 2 minutes. Return the chicken to the pan, add spinach and the remaining seasonings. Toss and cook for 2-3 minutes until the spinach wilts.
  • Remove from heat, finish with fresh lemon zest, adjust seasonings, and serve immediately.

Notes

For even more flavor, marinate the chicken in olive oil, lemon juice, and herbs for 30 minutes before cooking. Make sure not to overcrowd the skillet to ensure the chicken gets a nice sear. Feel free to mix in other vegetables like zucchini or eggplant based on your preference.
