  • 8 ounces elbow macaroni Cook according to package instructions
  • 1 cup diced cooked chicken Use rotisserie chicken for convenience

Fresh Vegetables

  • 1 cup diced bell peppers (red, green, or yellow) Choose any color of bell pepper
  • 1 cup cherry tomatoes, halved Adds sweetness
  • 1/2 cup diced red onion Optional: can substitute with green onion for a milder taste

Dressing and Cheese

  • 1 cup ranch dressing Can substitute with Greek yogurt for a healthier option
  • 1 cup shredded cheddar cheese Use mild or sharp cheddar

Seasoning and Garnish

  • to taste Salt and pepper Season to your preference
  • for garnish Fresh parsley Chopped, for serving

Instructions
 

Preparation

  • Cook the elbow macaroni according to package instructions until al dente. Drain and rinse with cold water.
  • In a large bowl, combine the cooked macaroni, diced chicken, bell peppers, cherry tomatoes, and red onion.
  • Add the ranch dressing and mix until all ingredients are well coated.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.
  • Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.

Notes

Make sure to rinse the macaroni with cold water after cooking to stop the cooking process and keep it from getting mushy. Customize the salad with other veggies or proteins for variation. For more crunch, consider adding celery or cucumber.
