Preparation

  • Cut the chicken breast into small pieces.
  • Dice bell peppers and chop spinach.
  • Pulse cauliflower in a food processor until it resembles rice.
  • Hollow out zucchini and bell peppers.

Cooking

  • In a skillet, sauté chicken in olive oil until golden, then add broccoli and spices.
  • Cook ground turkey in a skillet, adding diced bell peppers and spinach.
  • Mix eggs with chopped veggies, pour into muffin tins, and bake until set.
  • Fill hollowed bell peppers with a mixture of ground turkey and cheese, then bake.
  • Sauté cauliflower 'rice' with vegetables and scrambled eggs.
  • Layer Greek yogurt with nuts and berries to create a parfait.
  • Mix diced chicken with avocado, Greek yogurt, and spices.
  • Dip chicken in beaten eggs, coat with crushed almonds, and bake.
