  • 4 large potatoes, peeled and diced
  • 1 large onion, chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk (for dairy-free) Can be substituted with regular milk or cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions, chopped for garnish
  • Bacon bits or vegan bacon optional, for topping

Preparation

  • In a large pot, sauté the chopped onion until translucent.
  • Add the diced potatoes and vegetable broth, bringing it to a boil.
  • Reduce heat and let it simmer until the potatoes are tender, about 15-20 minutes.
  • Stir in coconut milk, garlic powder, onion powder, salt, and pepper.
  • Use an immersion blender to blend until smooth, or leave it chunky based on your preference.

Serving

  • Serve hot, garnished with green onions and bacon bits if desired.

Notes

For a richer flavor, try adding a pinch of smoked paprika or cayenne pepper. If you want more texture, leave some potato chunks unblended. Make it a full meal by adding cooked vegetables like broccoli or corn.
