Ingredients

For the Soup

  • 2 cups leftover mashed potatoes
  • 2 cups chicken or vegetable broth
  • 1 cup milk or cream Depending on your preference
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Optional toppings: chives, shredded cheese, bacon bits, or sour cream

Instructions

Preparation

  • In a large pot, heat the olive oil or butter over medium heat.
  • Add the diced onion and minced garlic. Sauté until the onion is soft and translucent, about 5 minutes.
  • Stir in the leftover mashed potatoes, mixing well with the onion and garlic.
  • Gradually add the broth, stirring until the mixture is smooth and creamy.
  • Pour in the milk or cream, and continue to stir. Let the soup simmer for about 10 minutes, allowing it to heat through.
  • Taste and season with salt and pepper according to your preference.
  • If you prefer a smoother texture, you can blend the soup with an immersion blender or in a standard blender until creamy.
  • Serve hot, garnished with your choice of toppings.

Notes

Use rich, creamy mashed potatoes for a thicker soup. Customize the soup by adding vegetables like carrots or celery for more flavor and nutrients. For a spicy kick, consider adding a pinch of cayenne pepper or some diced jalapeños.
