Ingredients
  

Meat and Vegetables

  • 1 pound spicy Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Liquids and Seasonings

  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Noodles and Cheese

  • 8 pieces lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese For garnish

Garnish

  • Fresh basil or parsley, for garnish

Instructions
 

Preparation

  • In a large pot, cook the spicy Italian sausage over medium heat until browned, breaking it up with a spoon as it cooks.
  • Add in the chopped onion and minced garlic. Cook until the onion is soft, about 5 minutes.

Cooking

  • Stir in the crushed tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
  • Add the broken lasagna noodles to the pot. Reduce heat and let it simmer until the noodles are tender, about 10-12 minutes.
  • Once cooked, stir in the ricotta cheese until well combined.

Serving

  • Serve hot, topped with shredded mozzarella and fresh herbs.

Notes

For an extra kick, use hot Italian sausage instead of spicy sausage. Feel free to add vegetables like spinach or mushrooms for added nutrition. Adjust the amount of broth depending on how thick or soupy you like your dish. If you like a richer flavor, use beef broth instead of chicken or vegetable broth. Consider making a vegetarian version by omitting the sausage and adding lentils or beans for protein.
