Ingredients
  

Meat and Vegetables

  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced

Liquids and Pasta

  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 2 cups water
  • 8 ounces lasagna noodles, broken into pieces

Spices and Herbs

  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Dairy Toppings

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil, for garnish

Cooking

  • In a large pot, brown the ground beef or Italian sausage over medium heat.
  • Add the chopped onion and garlic, and sauté until the onion is translucent.
  • Stir in the crushed tomatoes, broth, water, broken lasagna noodles, Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the noodles are cooked.
  • In serving bowls, add a scoop of ricotta cheese and sprinkle mozzarella cheese on top.
  • Ladle the soup over the cheese and garnish with fresh basil. Serve hot.

Notes

To store Lasagna Soup, allow it to cool completely. Transfer to airtight containers and keep in the refrigerator for up to three days or freeze for up to three months. Use homemade broth for a richer flavor and consider a vegetarian version with more vegetables.
