Ingredients
  

Broth and Liquids

  • 4 cups vegetable broth Use low-sodium for a lighter flavor.
  • 1 cup water

Vegetables

  • 1 medium onion, thinly sliced
  • 1 medium carrot, julienned
  • 1/2 cup mushrooms, sliced Any variety such as shiitake or button.
  • 2 stalks green onions, chopped For garnish.

Seasoning and Optional Ingredients

  • to taste soy sauce Adjust amount based on preference.
  • to taste salt and pepper
  • sesame oil Optional, for serving.
  • 1 block tofu, diced Optional, for added protein.

Preparation

  • In a large pot, combine vegetable broth and water. Bring to a boil over medium heat.
  • Add sliced onions and carrots to the pot and simmer for about 5 minutes until they start to soften.
  • Stir in the mushrooms and let them cook for another 5 minutes.

Seasoning and Serving

  • Season the soup with soy sauce, salt, and pepper.
  • If using, add tofu and heat through.
  • Serve hot, garnished with chopped green onions and a drizzle of sesame oil, if desired.

Notes

Use fresh ingredients for the best flavor. Adjust the seasoning according to your taste. For extra richness, try adding a few drops of sesame oil just before serving. Experiment with different vegetables, like bok choy or spinach, for variety. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to two months.
