  • 4 large large potatoes, peeled and diced Russet or Yukon gold potatoes are preferred for creaminess.
  • 1 cup onion, chopped
  • 3 cups vegetable or chicken broth Use vegetable broth for a vegan option.
  • 1 cup heavy cream Substitute with coconut cream for a vegan option.
  • 2 tablespoons butter Can be substituted with olive oil for a vegan option.
  • to taste Salt and pepper
  • to taste Chives for garnish Fresh chives add flavor and color.

Preparation

  • In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  • Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.

Blending and Finishing

  • Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.
  • Stir in the heavy cream and season with salt and pepper.
  • Serve hot, garnished with chopped chives.

Notes

For a smoother texture, blend thoroughly. Adjust the consistency by adding more or less broth. For added flavor, consider adding garlic or herbs like thyme or parsley during cooking.
