Ingredients
  

Grains

  • 1 cup quinoa Rinse before cooking
  • 2 cups water or vegetable broth

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 large bell pepper, chopped
  • 1 can black beans, rinsed and drained
  • 1 large avocado, diced
  • 1/4 cup fresh parsley, chopped

Dressing

  • 1 unit Juice of 1 lemon
  • 3 tablespoons olive oil
  • to taste Salt and pepper

Instructions
 

Preparation

  • Rinse the quinoa in cold water and drain.
  • In a saucepan, combine quinoa and water (or vegetable broth). Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed. Remove from heat and let it cool.

Mixing

  • In a large bowl, combine the cooked quinoa with cherry tomatoes, cucumber, bell pepper, black beans, avocado, and parsley.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the quinoa salad and toss gently to combine.

Serving

  • Serve immediately or chill in the fridge for flavors to blend.

Notes

You can serve this salad as a main dish or side dish. It pairs well with grilled chicken or fish. Feel free to switch out the vegetables based on availability and add proteins like grilled chicken or shrimp for an extra boost.
