  • 1 cup almond butter

  • ½ cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1 cup dried fruit (such as cranberries or raisins) Feel free to mix and match dried fruits.
  • 1 cup nuts (such as walnuts or almonds) Chop nuts smaller for a crunchier texture.
  • 1 teaspoon vanilla extract

Preparation

  • In a large bowl, mix the almond butter and honey (or maple syrup) until well combined.
  • Add the rolled oats, dried fruit, nuts, vanilla extract, and salt. Stir until all ingredients are fully mixed.
  • Line an 8x8 inch baking dish with parchment paper. Pour the mixture into the dish and spread it evenly.
  • Press down firmly to make it compact.
  • Refrigerate for at least 1 hour until firm.

Serving

  • Once set, cut into bars or squares and serve.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to three months. Thaw before eating.
