  • 2 large cooked and shredded chicken breasts Use leftover rotisserie chicken to save time.
  • 2 medium zucchinis Sliced for sautéing.
  • 1 large red bell pepper Diced.
  • 1 cup cottage cheese
  • 3 large eggs
  • 1 cup grated cheddar cheese Divided into two portions.
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
  • Sauté the diced red bell pepper and sliced zucchini in olive oil over medium heat for about 3-4 minutes until slightly softened. Season with salt and pepper.
  • In a mixing bowl, whisk together the eggs, cottage cheese, garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper until smooth.
  • Stir in the shredded chicken, sautéed vegetables, and half of the cheddar cheese until well combined.
  • Pour the mixture into the prepared baking dish and top with the remaining cheddar cheese and Parmesan cheese.
  • Bake for 30-35 minutes until golden brown on top and set in the center.
  • Let it rest for 5 minutes before serving.

Notes

This casserole is highly customizable. You can change the type of cheese, add different herbs, or include other proteins like turkey or tofu for a vegetarian option. To make it spicier, add a pinch of crushed red pepper flakes or some chopped jalapeños.
