  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas, etc.) Feel free to use fresh or frozen vegetables.
  • 4 cloves garlic, minced Adjust the amount to taste.
  • 2 tablespoons soy sauce Use tamari for gluten-free.
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • to taste Salt and pepper
  • for serving Cooked rice or noodles Use your preferred choice.

Cooking

  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Add shrimp and cook until pink, about 3-4 minutes.
  • Add mixed vegetables and stir-fry for 5 minutes.
  • Stir in soy sauce and sesame oil, season with salt and pepper.
  • Serve over cooked rice or noodles.

Notes

Garnish with sesame seeds or chopped green onions for extra flavor and color. Make sure not to overcook the shrimp to keep them tender. Adjust garlic and soy sauce according to your taste for a stronger or lighter flavor. For added crunch, consider adding chopped nuts like cashews or peanuts.
