  • 2 ripe bananas Make sure they are very ripe for the best sweetness.
  • 1 cup quick cook oats Use quick cook oats for the best texture.
  • 1/4 cup peanut butter or almond butter Feel free to experiment with different nut butters.
  • 1/4 cup honey or maple syrup Maple syrup can be substituted with agave nectar for a vegan option.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon Add other spices like nutmeg for variation.
  • 1/4 cup chocolate chips, nuts, or dried fruit These are optional add-ins.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mash the ripe bananas with a fork until smooth.
  • Add the quick cook oats, peanut butter, honey or maple syrup, vanilla extract, baking powder, and cinnamon to the bowl. Mix everything together until well combined.
  • If you are using chocolate chips, nuts, or dried fruit, stir them in now.
  • Drop tablespoons of the cookie mixture onto a baking sheet lined with parchment paper, flattening them slightly.

Baking

  • Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown.
  • Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

These cookies are best served warm or at room temperature. Pair them with yogurt or fruit for a more filling meal. Store in an airtight container at room temperature for up to 3 days, in the fridge for a week, or freeze for up to 3 months, ensuring to separate layers with parchment paper.
