Ingredients
  

For the soup

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 medium carrots, diced
  • 1 cup celery, diced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until soft, about 5 minutes.
  • Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  • Add the ground turmeric and mix well.

Cooking

  • Pour in the chicken broth and bring to a boil.
  • Add the diced carrots and celery, then reduce the heat to simmer for about 15 minutes, or until the vegetables are tender.
  • Stir in the shredded chicken and season with salt and pepper.
  • Let it simmer for another 5 minutes.
  • Garnish with fresh parsley if desired, and serve hot.

Notes

Serve hot on its own or with crusty bread. Store leftover soup in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months. To reheat, warm in a pot or microwave.
