Ingredients
  

Vegetable Ingredients

  • 4 medium zucchinis Cut in half lengthwise
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Meat Ingredients

  • 1 pound ground beef Can substitute with ground turkey or chicken

Seasonings and Sauce

  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 cup marinara sauce Can substitute with salsa if desired

Cheese

  • 1 cup shredded mozzarella cheese For topping the zucchini boats

Garnish

  • to taste Fresh parsley For garnish

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and scoop out the insides to create boats.

Cooking

  • In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
  • Stir in the Italian seasoning, salt, pepper, and marinara sauce.
  • Fill each zucchini boat with the beef mixture and top with shredded mozzarella cheese.
  • Place the filled zucchini boats in a baking dish and cover with foil.
  • Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.

Serving

  • Garnish with parsley before serving.
  • Serve the Ground Beef Zucchini Boats warm, straight from the oven. They can be enjoyed on their own or with a side salad.

Notes

You can store leftover Ground Beef Zucchini Boats in an airtight container in the refrigerator for up to 3 days. To reheat, simply place them in the oven at 350°F (175°C) until heated through.
