Vegetables

  • 2 medium zucchinis Cut in half and scooped out
  • 1 small onion, diced
  • 2 cloves garlic, minced

Main ingredients

  • 1 pound ground beef
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar) For topping

Herbs and spices

  • 1 teaspoon Italian herbs
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and scoop out the centers to create boats.

Cooking

  • In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are translucent. Drain any excess fat.
  • Stir in the Italian herbs, salt, pepper, and marinara sauce.

Assembly and Baking

  • Fill the zucchini boats with the beef mixture and top with shredded cheese.
  • Place the boats on a baking sheet and bake for 25-30 minutes, until the zucchini is tender and the cheese is bubbly.

Serving

  • Serve warm, optionally garnished with extra herbs or chili flakes.

Notes
