  • 2 cloves garlic, minced
  • 1 medium onion, chopped

  • Cook the egg noodles according to package instructions and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add chopped onion and garlic, sauté until translucent.
  • Add ground beef and cook until browned.
  • Stir in sliced mushrooms and cook until soft.
  • Pour in beef broth and let simmer for 5 minutes.
  • Reduce heat, stir in sour cream, and season with salt and pepper.
  • Combine the sauce with egg noodles, mixing well.
  • Serve hot and enjoy!

Notes

Serve hot straight from the skillet. Garnish with fresh parsley and pair well with a side salad or steamed vegetables. To store, place Stroganoff in an airtight container and refrigerate for up to 3 days. Reheat in a skillet or microwave, adding a splash of broth if needed. For a lighter version, substitute ground turkey or chicken, and use whole wheat or zucchini noodles.
