  • 1 lb ground beef
  • 1 cup enchilada sauce
  • 2 cups shredded cheese
  • 8-10 pieces flour tortillas
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat and add the diced onion. Cook until softened.
  • Add the ground beef, garlic powder, cumin, salt, and pepper. Cook until the beef is browned.
  • Pour in half of the enchilada sauce and mix well.
  • Fill each flour tortilla with a portion of the beef mixture and some cheese, then roll them up.
  • Place the rolled tortillas seam-side down in a baking dish.
  • Pour the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Bake for 20-25 minutes until the cheese is bubbly and golden.

Notes

Serve the enchiladas hot with optional toppings like cheese, sour cream, guacamole, jalapeños, or cilantro. They pair well with Mexican rice or salad. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 3 months.
