Ingredients
  

For the Chicken and Marinade

  • 4 pieces Chicken breasts Boneless
  • 1/4 cup Olive oil Extra virgin preferred
  • 2 tablespoons Lemon juice Freshly squeezed
  • 3 cloves Garlic Minced
  • 1 teaspoon Oregano Dried
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

For the Bowls

  • 1 medium Cucumber Chopped
  • 1 cup Tomatoes Chopped
  • 1/2 medium Red onion Chopped
  • 1/2 cup Feta cheese Crumbled
  • 1/2 cup Tzatziki sauce
  • 2 cups Cooked rice or quinoa For serving

Instructions
 

Marinate the Chicken

  • In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Add chicken breasts and marinate for at least 30 minutes.

Cook the Chicken

  • Grill or sauté the marinated chicken until fully cooked, about 7-8 minutes per side.
  • Let it rest before slicing.

Prepare the Vegetables

  • Chop cucumber, tomatoes, and red onion.

Assemble the Bowls

  • In a bowl, layer cooked rice or quinoa at the bottom.
  • Add sliced chicken, and top with fresh vegetables and crumbled feta cheese.
  • Drizzle with tzatziki sauce and customize with any additional favorite toppings.

Notes

Serve Greek Chicken Bowls warm or at room temperature. They are great on their own but can also be accompanied by extra tzatziki sauce, olives, or pita bread. Store leftovers in an airtight container in the refrigerator for 3-4 days and reheat as necessary.
