  • 1 cup sweet carrots, sliced

Cooking Instructions

  • Heat olive oil in a large pan over medium-high heat.
  • Add the garlic and sauté for about 30 seconds until fragrant.
  • Add the shrimp and cook until pink, about 2-3 minutes.
  • Toss in the broccoli, carrots, and snap peas, and stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
  • Pour in the soy sauce and stir to combine. Season with salt and pepper to taste.
  • Serve the stir fry over steamed rice, quinoa, or cauliflower rice.

Notes

Make sure not to overcook the shrimp; they’re done when they turn pink and opaque. Feel free to add other vegetables like bell peppers or zucchini for variety. Adjust the garlic and soy sauce to match your flavor preference. Leftovers can be stored in an airtight container in the refrigerator for about 2-3 days.
