  • 1 head green cabbage, chopped Chopped into bite-sized pieces.
  • 1 medium onion, diced Any type of onion can be used.
  • 1 medium bell pepper, diced Use any color bell pepper.
  • 1 pound ground beef or turkey Can be substituted with sausage or shredded rotisserie chicken.
  • 1 can diced tomatoes
  • 3 cups Fritos corn chips Add more for serving if desired.
  • 2 cups shredded cheese Cheddar or your choice.
  • 1 packet taco seasoning Spicy variation can be used.
  • to taste Salt and pepper Adjust as needed.

Preparation

  • In a large skillet, brown the ground beef or turkey over medium heat until cooked through. Drain excess fat.
  • Add the diced onion and bell pepper to the skillet and sauté until softened.
  • Stir in the chopped cabbage and cook until the cabbage is slightly wilted.
  • Add the can of diced tomatoes, taco seasoning, salt, and pepper. Mix well.
  • Simmer for about 10-15 minutes until everything is heated through.

Serving

  • In a large serving dish, layer the cabbage mixture, Fritos, and top with shredded cheese.
  • Serve immediately, allowing each person to add more Fritos on top if desired.

Notes

This dish pairs well with a simple green salad or some sliced fruit. Store leftovers in an airtight container for 3-4 days.
