Ingredients
  

For the peach filling

  • 4 cups fresh peaches, sliced Use ripe, sweet peaches for the best flavor.
  • 1/2 cup sugar Half of the total sugar used for the cobbler.
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice

For the batter

  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar Remaining sugar for the batter.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the sliced peaches with 1/2 cup sugar, cinnamon, and lemon juice. Pour the peach mixture into a greased baking dish.
  • In another bowl, mix the flour, baking powder, salt, and the remaining sugar. Stir in the milk, melted butter, and vanilla until combined.

Baking

  • Pour the batter over the peach mixture in the baking dish.
  • Bake for 40-45 minutes, or until the top is golden brown and the peaches are bubbling.
  • Let cool slightly before serving. Enjoy warm with ice cream if desired.

Notes

Store leftover cobbler covered in the refrigerator for 3-4 days. It can be frozen for up to 3 months.
