  • 2 large eggs

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 4 links sausage Can be substituted with bacon or ham.

Preparation

  • Flatten each slice of bread with a rolling pin.
  • In a bowl, whisk together the eggs, milk, vanilla, and cinnamon.
  • Dip each slice of flattened bread into the egg mixture, coating both sides.
  • Place a sausage link at one end of the bread slice and roll it up tightly.

Cooking

  • Heat butter in a skillet over medium heat.
  • Cook the roll-ups, seam side down, until golden brown, about 3-4 minutes on each side.

Serving

  • Serve warm with maple syrup for dipping.

Notes

To store leftovers, place uneaten roll-ups in an airtight container in the refrigerator. They will stay fresh for about 2-3 days. Reheat in a skillet or microwave before serving. Sprinkle powdered sugar on top before serving for added sweetness.
