  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup vegetable oil or melted butter

Preparation

  • Preheat your oven to 425°F (220°C). Grease a cast-iron skillet or baking dish.
  • In a bowl, mix together the cornmeal, baking powder, baking soda, and salt.
  • In another bowl, whisk together the eggs, buttermilk, and milk.
  • Combine the wet and dry ingredients, mixing until just combined.
  • Stir in the vegetable oil or melted butter until smooth.
  • Pour the batter into the prepared skillet or dish.

Baking

  • Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Let cool slightly before serving.

Notes

Serve this cornbread warm with butter, honey, or jam. For variations, add cheese, jalapeños, or sweet corn for extra flavor. Store leftovers in plastic wrap or foil in the refrigerator for up to a week or freeze for longer storage.
