  • 2 cups cooked chicken, shredded Use rotisserie chicken for a quick option.
  • 8 oz pasta (like penne or rotini)
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 cup salsa Select spicy or mild salsa according to your preference.
  • 1 cup shredded cheese (like cheddar or Monterey Jack) Top with additional cheese if desired.
  • 1/2 cup sour cream
  • 1 tsp cumin
  • to taste Salt and pepper Season according to personal preference.
  • 1 tbsp olive oil Used for greasing the baking dish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the pasta according to package instructions; drain and set aside.
  • In a large bowl, combine the cooked chicken, corn, black beans, salsa, sour cream, cheese, cumin, and the cooked pasta.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.
  • Top with additional cheese if desired.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until heated through and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Serve garnished with chopped cilantro, jalapeños, or slices of avocado. Pairs well with a side salad or tortilla chips. Store leftovers tightly covered in the refrigerator for up to 3 days, or freeze for longer storage.
